Baking a Carrot Cake.

Finally! My first autumn themed dessert this year, from the one and only Sally. The last time I baked one I was in Glasgow for my Erasmus scholarship and it was nine years ago. I’ve grabbed a few slices at Starbucks in the meantime bit I still prefer home-made. This one came out positively scrumptious. Ah. How I missed this richness of batter.

My cream cheese frosting is always a little limp but I like it like this. :p Plus I manage to save exactly one cup of powdered sugar. That’s a lot.
